Candied Peel & Ginger

1/2 C peel, sliced with pith removed
1/4 C ginger peeled and sliced very thin
400 g sugar
extra sugar

Boil ginger 30 mins and reserve 1 C ginger water.*
Separately boil peels 15 mins, drain, rinse, and drain again.
Add boiled peels and boiled ginger to ginger water.
Stir in sugar and boil for 30 mins or until syrup reaches 225 F.
Strain ginger simple syrup for another use.
Toss peels and ginger in extra sugar.
Dry on wire rack 1-2 days.

*Save the rest for anything spicy using water like construction gingerbread or pumpkin bread!
