Preheat oven to 375 and line two baking sheets.
In a small bowl, combine 80 g sugar and 1 1/2 t cinnamon, and set aside.

Separately, whisk together flour, tartar, soda, cinnamon, and salt.
Cream sugar and butter 2 mins or until fluffy.
Add egg, yolk, and vanilla.
Add dry ingredients just until combined; dough will be thick.
Scoop 2 T scoops and drop into cinnamon sugar.

Arrange on baking sheets; will yield 2 dozen cookies.
With no resting, bake 10 mins.
Lightly press down on them with a spatula to flatten & crack.
Let cool on baking sheet 10 mins.
Store in an airtight container.
