Kässpätzle

500 g flour
5 eggs
5 oz sparkling water, water, or milk
1/4 t salt
300 g variety of cheeses
1 large onion
3 T butter

Slice onion into thin strips and saute in butter for 90 mins.
Mix flour, eggs, salt, and just enough water so that dough is thick.
Let sit for a few minutes until smooth.
Press through Kässpätzle mold into boiling water.
Remove after noodles are boiling (1-2 mins) with a slotted spoon.
Layer in a 9x13 casserole pan with cheeses and top with onion.
