Chewy Fudgy Brownies

1/2 C butter
8 oz chocolate bars, less than half of which should be 100% dark
150 g sugar
50 g brown sugar
3 eggs, room temp
1 t vanilla
80 g AP flour
11 g cocoa powder
1/4 t salt
1 C or 170 g chocolate chips

Adjust oven rack to lower third and preheat to 350.
Melt butter and chocolate and pour into a mixing bowl.
Whisk sugars into hot butter and let cool 10 mins.
Line 8x8 baking pan.
Whisk in eggs and vanilla.
Gently fold in flour, cocoa, and salt.
Fold in chocolate chips.
Bake for 35 mins and cool completely before cutting.
Wipe knife after each cut.

Note 1:
To get them even fudgier, underbake by up to 10 mins.
They won't set until completely cooled in the fridge.

Note 2:
To get brownie skin, replace sugar with powdered sugar.
