Chewy Fudgy Brownies

1/2 C oil, 1/2 C butter (originally butter)
16 oz chocolate from bars, 60-80%
300 g sugar
100 g brown sugar
6 eggs, room temp
2 t vanilla
160 g AP flour
22 g cocoa powder
1/2 t salt
2 C or 170 g chocolate chips

Adjust oven rack to lower third and preheat to 325.
Melt butter and chocolate and set aside.
Line 8x8 baking pan.
In a stand mixer bowl, combine sugars, eggs, and vanilla.
Whisk to dissolve sugar (this will help create brownie skin).
Incorporate chocolate.
Gently fold in flour, cocoa, and salt.
Fold in chocolate chips (this also helps to create brownie skin).
Bake 45 mins or until internal temp is 185.
Let cool completely before cutting.
Wipe knife after each cut.

Note 1:
For more brownie skin, replace sugar with powdered sugar.

Note 2:
This recipe is doubled but uses the same size pan as the original.
