Chewy Fudgy Brownies

1 C oil (originally butter)
16 oz chocolate from bars, 60-80%
300 g sugar
100 g brown sugar
6 eggs, room temp
2 t vanilla
160 g AP flour
22 g cocoa powder
1/2 t salt
2 C or 170 g chocolate chips

Adjust oven rack to lower third and preheat to 350.
Melt butter and chocolate and set aside.
Line 8x8 baking pan.
In a stand mixer bowl, combine sugars, eggs, and vanilla.
Whisk to dissolve sugar.
Incorporate chocolate.
Gently fold in flour, cocoa, and salt.
Fold in chocolate chips.
Bake for 40 mins and cool completely before cutting.
Wipe knife after each cut.

Note 1:
To get them even fudgier, underbake by up to 10 mins.
They won't set until completely cooled in the fridge.

Note 2:
Brownie skin is about dissolved sugar.
For more brownie skin, replace sugar with powdered sugar.

Note 3:
This recipe is doubled but uses the same size pan as the original.
