42 g sugar
1/2 t vanilla
1/16 t salt
42 g flour
1 T butter, melted and cooled
1/2 T oil
oil with silicone brush or oil spray
6 chocolate chips
Preheat waffle iron to 5.
Melt butter and set aside.
In a small mixing bowl, whisk together whites, sugar, and vanilla.
Whisk in salt, flour, butter, and oil to make a batter.
Prepare shaping station:
timer, oil
tongs, clean rag, cone mold
chocolate chips, cooling rack, chopstick
If making many, place waffle batter in a piping bag with batter tip.
Oil waffle iron.
Once light turns green, pipe about 1/4 C batter into iron.
Bake 2 - 2.5 mins.
using tongs, bring hot waffle onto rag.
shape hot waffle around mold, pinch bottom point, and hold 10 secs.
remove mold, place cone in cooling rack, and add 3 chocolate chips.
once chocolate is melted, swirl with chopstick.
Re-oil every other waffle; wait for green light before piping.
Optional: bake at 200 for extra crispiness
Optional: decorate with more chocolate, sprinkles, nuts, cookies, etc.
Once cooled, store in an airtight container.
Yields 2 large waffles.
