3/4 C veg oil
3.4 oz box pistachio pudding
3 eggs
1 C club soda, 7UP, or ginger ale
blue food coloring
1/2 C finely chopped pecans
1/2 C sweetened coconut
2.6 oz (2 envelopes) Dream Whip
1 1/4 C cold milk

Preheat oven to 350.
Cake release two 9-inch cake rounds or line with parchment.In a stand mixer, combine cake mix, oil, pudding mix, eggs, and soda.
If you'd like, add blue food color to offset the color of the yolks.
That way, your cake will match your frosting.
Beat on low for about 30 secs.
Scrape bowl and beat on medium for 3-4 mins.
Bake 35-40 mins and let cool completely.
Beat Dream Whip and cold milk on high 5 mins or until soft peaks form.
Add pudding mix and beat until fluffy.
Frost cake and decorate with coconut and pecans.
