Raw Margherita Sauce

10 plum tomatoes
5 cloves garlic, diced
2 T olive oil
1 C chopped basil
1/2 C chopped parsley
2 t salt
1 t pepper

Cut an X into tomatoes, blanch (boil 1-2 minutes), cool, and peel.
Dice tomatoes and combine with other ingredients.
Leave out at room temperature for 3 hours.
