2 T butter, melted
2 T brown sugar
1/8 t salt
3/4 t pumpkin pie spice
1/2 C milk
2 C cream
14 oz sweetened condensed milk
Preheat oven to 400.
Peel carrots and cut into 1/2" pieces.
Coat with butter, brown sugar, salt, and spice.
On a silpat lined tray, roast for 30 mins.
Once roasted, puree with milk and chill several hours.
Combine with cream and condensed milk before churning.
