3 C Quaker Oats (quick or old fashioned)
6 T butter
1 1/2 C chicken or beef broth
4 T dried parsley
1 t oregano
1 t basil
1/2 t salt
Beat eggs and combine with oats.
Melt butter in large skillet.
Cook oats, stirring constantly, 3-5 mins or until dry and lightly browned.
Add broth, herbs, and salt.
Cook, stirring occasionally, 2-3 mins or until broth is absorbed.
Serve in place of rice or pasta.
