1 T olive oil
1 onion, diced
1 lb 90% lean ground beef
2 1/2 T chili powder
2 T cumin
2 T sugar
1 T garlic powder
1 1/2 t salt
1/2 t pepper
1/4 t cayenne
2 T tomato paste
1 1/2 C beef broth
15 oz. can diced tomatoes, unstrained
16 oz. can red kidney beans, drained and rinsed
8 oz. can tomato sauce
In a stock pot, sauté onion for 5 mins.
Add ground beef and brown for 7 mins.
Stir in dry ingredients and tomato paste.
Add broth, tomatoes, beans, and tomato sauce.
Bring to boil, reduce heat, and simmer uncovered for 25 mins.
Remove from heat and let chili rest 5 mins.
Serves 4.
