Red Velvet Cake

594 g AP flour
594 g sugar
3 T cocoa powder
1 1/2 t baking soda
1 1/2 t salt
1 1/2 C buttermilk, room temp
3/4 C vegetable oil
18 T butter, melted
3 eggs, room temp
1 1/2 t vanilla
4 1/2 t white vinegar
1 T super red food coloring

Preheat oven to 335.
Cake release three 9-inch rounds or line with parchment.
Whisk together flour, sugar, cocoa, soda, and salt.
Separately, whisk together buttermilk, oil, butter, eggs, and vanilla.
To wet ingredients, add vinegar and color, adding more color if necessary.
Pour wet ingredients into dry and mix just until combined.
Bake 35-40 mins.
Firmly tap pans on countertop to release steam after baking.
Let cool 10 mins before flipping.
