Pumpkin Cake

500 g AP flour
4 t baking powder
2 t baking soda
2 t salt
3 T pumpkin pie spice
2 C oil
8 eggs
400 g brown sugar
200 g sugar
30 oz pumpkin puree
4 t vanilla

Preheat oven to 350.
Line and spray three 9-inch round cake pans or use cake release.
Whisk together flour, baking powder, baking soda, salt, and spices.
Separately whisk together oil, eggs, sugars, pumpkin, and vanilla.
Pour wet ingredients into dry ingredients and fold just until combined.
Bake 45 mins or until centers are very dry.
Cool and top with cream cheese frosting.
For a 9x13, halve recipe and bake for 30-36 mins.
