Bran Muffins

1 C boiling water
1 C Post Bran Flakes

1 1/2 C Kellogg's All Bran Original
1/2 C vegetable oil
2 eggs, room temp
2 C milk

300 g sugar
300 g whole wheat flour
2 1/2 t baking soda
2 1/2 t salt

Mix boiling water and cereals until mushy.
Add wet ingredients.

Add dry ingredients.
Let batter sit in fridge overnight.
Bake at 375 for 22 mins.

Makes 24 muffins.

Note:

Can substitute 150 g whole wheat flour and 1 1/4 C or 240 g spent flour
for 300 g whole wheat flour.
Bake 26 mins.
