Pumpkin Cookies

360 g flour
1 t baking soda
1 T pumpkin pie spice
1/2 t salt
1 C butter, room temp
150 g sugar
160 g brown sugar
1/3 strained pumpkin purée

Whisk together flour, soda, spice, and salt.
Separately, cream together butter and sugar.
Beat in pumpkin.
Gradually add dry ingredients; dough will be thick.
Using a cookie scoop, form into balls.
Refrigerate at least 30 mins.
Roll in extra sugar and bake at 350 for 15-19 mins.
