3 T peanut oil
1.25 lb ground pork
1 bunch green onions, finely sliced
1 T fish sauce
1/2 t salt
1 t pepper
2 cloves garlic, finely diced
1 large shallot, finely diced
Cut tomatoes in half and reserve tomato insides.
Mix pork, onion, fish sauce, salt, and pepper.
Heat 1 T peanut oil in cast iron pan on medium high until smoking.
Fill tomato halves with ground pork.
Place 6 tomato halves, pork side down, on hot skillet until well seared.
Turn heat down to low, cover, and steam for 10 mins.
Remove from pan and cook remaining tomatoes.
Heat last T peanut oil and fry garlic and shallots.
Add tomato insides and tomato juices to the pan.
Turn heat up to medium and stir until sauce has thickened.
Pour sauce over tomatoes.
