Chocolate Sour Cream Frosting

6 oz semisweet chocolate bars, chopped
6 T butter
1 1/2 t vanilla
1/4 t salt
396 g powdered sugar
21 g natural cocoa powder
6.5 oz sour cream

In a double boiler, melt chocolate and butter, stirring until smooth.
Transfer to stand mixer bowl and add vanilla and salt.
Sift powdered sugar and cocoa powder together.
Add half of sugar to melted chocolate and beat on low 1 min.
Add sour cream and beat on medium another min.
Add remaining sugar and cocoa.
Beat on low 1 min and then on high 2-3 mins.
Use frosting immediately; will firm up like soft fudge.
