16 oz nuts
200 g sugar
45 g brown sugar
1 T cinnamon
1 t nutmeg
1 t salt
2 egg whites
2 T bourbon
1 T honey
1 T vanilla
Preheat oven to 250.
Combine sugar, brown sugar, cinnamon, nutmeg, and salt.
Separately, whisk together egg whites, bourbon, honey, and vanilla.
Coat nuts with wet mixture, strain, and coat with dry mixture.
Arrange coated nuts on silpat and bake for 75 mins, stirring every 20.
Allow to cool completely before storing in an airtight container.
