1 t baking soda
1 1/2 t cinnamon
1/2 t ground star anise
1/2 t ground ginger
1/4 t ground cloves
1/8 t salt
5 T butter
160 g powdered sugar
2 eggs
3 T honey
1 t vanilla
2 t lemon zest
3 T honey
1 t vanilla
2 t lemon zest
Sift together flour, soda, spices, and salt.
In a stand mixer, cream butter and sugar until fluffy.
Beat in eggs, honey, vanilla, and zest, scraping bowl as needed.
Beat for about a minute to ensure everything is well blended.
On low speed, incorporate dry ingredients.
Place dough on lightly floured surface and knead for one minute.
If dough is very sticky, add a little more flour.
Cover with plastic wrap and chill at least 4 hours.
Preheat oven to 350.
Using plenty of flour, roll to 1/8" to 1/6".
Cut cookies and bake 6-9 mins for smaller cookies or 10-14 for larger.
Can double the batch and make a gingerbread house with this dough!
