Norwegian Apple Pie

2 eggs, room temp
240 g sugar
2 t baking powder
1/2 t salt
1 T vanilla
125 g flour
2 C diced granny smith apples
1 C walnuts, toasted and chopped

Preheat oven to 350.
Toast walnuts, dice apples, and dice walnuts.
Mix egg with sugar and vanilla.
Separately, combine flour, baking powder, and salt.
Stir dry ingredients into wet.
Fold in apples and walnuts.
Mixture will look very chunky but transforms magically.
Bake in greased pie dish 50-55 mins or until dry.

Original recipe:

150 g sugar
1 t baking powder
1/4 t salt
1 t vanilla
63 g flour
1 C diced apples
1/2 C walnuts

Mix egg with sugar, baking powder, salt, and vanilla.
Stir in flour.
Fold in apples and walnuts.
Bake in greased pie dish at 350 for 30 mins or until dry.
