Chocolate Cake

375 g AP flour
600 g sugar
180 g cocoa powder, not Dutch process
1 T baking soda
1 1/2 t baking powder
1 1/2 t salt
4 eggs
1 1/2 C buttermilk (or 1 1/2 C milk with 2 T white vinegar), room temp
1 1/2 C hot coffee
1/2 C vegetable oil
2 t vanilla

Preheat oven to 350.
Cake release three 9-inch cake rounds or line with parchment.
Whisk together flour, sugar, cocoa, soda, powder, and salt.
Add eggs, buttermilk, coffee, oil, and vanilla.
Pour into pans and bake 30-35 mins.
(Pairs well with chocolate ganache.)
