2 1/2 t baking powder
1/4 t baking soda
1/2 t salt
2 egg whites, room temp
4 egg yolks, room temp
1/8 t cream of tartar
1 C butter
350 g sugar
2 t vanilla
1 C buttermilk, room temp
Preheat oven to 350°.
Cake release two 9-inch rounds or line with parchment.
Whisk together flour, baking powder, baking soda, and salt.
Separately, place egg whites and cream of tartar in stand mixer bowl.
On high speed, beat 3 mins or until fluffy peaks form.
Remove beaten whites, set aside, and wipe bowl dry.
On high speed, beat together butter and sugar for 3 mins.
On medium high speed, beat in egg yolks, one at a time.
Beat in vanilla.
By hand, alternate dry ingredients and buttermilk just until combined.
Batter will be very thick!!
Fold in egg whites.
Pour and level cakes and bake 27-31 mins or until done.
Pairs well with chocolate buttercream.
