Blondies

1 C butter
440 g brown sugar
2 eggs, room temp
1 yolk, room temp
1 T vanilla
250 g flour
1/2 t baking powder
1/2 t salt
1 C white or semisweet chocolate chips

Brown butter and let cool.
Preheat oven to 350.
Line 8x8 baking pan with parchment.
Whisk butter into sugar.
Whisk in eggs, yolk, and vanilla.
Separately, whisk together flour, baking powder, and salt.
Fold dry ingredients into wet just until combined.
Fold in chips.
Bake 25 mins or until barely done and still gooey in center.
Let cool and cut into 9 large squares.
(The more they're underbaked, the longer they need to cool).

Note:
To make Coach Aaron's cinnamon blondies,
add 1/2 t cinnamon to flour,
replace chocolate chips with cinnamon chips,
and sprinkle top with 2 T sugar mixed with 1 t cinnamon.
