400 g sugar
Cut each lemon into 6-8 slices and remove seeds.
Prepare a pot of boiling water and a bowl of ice water.
Boil lemon slices 1 min, plunge into ice water 2 mins, and drain.
Combine sugar and 2 C hot water in a medium size skillet.
Bring to a simmer, stirring occasionally.
Add lemon slices in a single layer and simmer 1 hour or until translucent.
Remove lemon slices and cool on wire rack.
