Dole Whip Ice Cream

1 standard cored cylinder from 1 ripe pineapple
13.5 oz can coconut milk from coconut extract
150 g sugar
2 t vanilla

Blend pineapple well.
Add remaining ingredients and blend again.
Chill mixture (about 3 1/2 C) until 1-4 hours before serving.
Place all ingredients in ice cream maker 60 mins or until firm and light.
While ice cream churns, place serving dishes in freezer.
(I use parchment cups in a cupcake tray.)
Pipe onto dishes through a large open star tip.
Return to freezer until ready to serve.
Yields 8 swirls, about 4" tall.

Disney uses dry Dole whip mix (vegan) and water.
Dole whip floats are Dole whips over canned pineapple juice.
