Dủa Chua

1 large carrot
1 large daikon
6 cloves garlic, peeled
2 T salt
3/4 C rice vinegar
3/4 C water
3/4 C sugar

Julienne carrot and daikon.
Sprinkle salt onto vegetables, stir, and let sit 15 mins.
Rinse and squeeze dry.
Separately, combine rice vinegar, water, and sugar.
Submerge carrot, daikon, and garlic.
Cover well and refrigerate 2-8 days
