1 C butter, room temp
150 g sugar
165 g brown sugar
2 eggs, room temp
1 t vanilla extract
281 g AP flour
1 t baking soda
1 t salt
2 C chocolate chips
1 C chopped nuts or an additional 1-2 T flour
70 g extra chocolate chips
In a stand mixer, beat butter until smooth and creamy.
Add sugars and beat until creamed.
Add eggs, one at a time, and then vanilla.
In a separate bowl, combine flour, baking soda, and salt.
Incorporate dry into wets on low speed.
Add 360 g chocolate chips and nuts.
Cover dough and place in refrigerator for 1 hour.
Let dough sit at room temperature for 10 mins and preheat oven to 375.
Line 1 or 2 baking sheets with silpats.
Roll each tablespoon of cookie dough into a ball.
Position 12 cookies on each sheet.
Bake for 9-11 mins.
While cookies are still soft, place 4 extra chocolate chips into each.
Keep cookies on baking sheet for an additional 2 mins.
Transfer to wire rack.
Makes 5 dozen cookies.
Do not bake on warm baking sheets.
