6 oz dark chocolate
2 eggs
2 yolks
50 g sugar
1/4 t salt
Line or grease 4 6-oz ramekins.
Double boil butter and chocolate, whisking until smooth.
Separately, beat eggs, yolks, sugar, and salt until thickened and pale.
Once chocolate is cool enough, fold chocolate and eggs.
Distribute into ramekins, flatten the tops, and chill at least 30 mins.
Preheat oven to 450°.
Place chilled ramekins on baking sheet and bake 9-12 mins.
Let cool 2-4 mins and release cakes upside down.
