World's Best Bubbles

1/2 C Dawn ultra or platinum, blue
1/2 t guar gum
1 1/2 t baking powder
1/2 gallon distilled water

Whisk together Dawn, guar gum, and baking powder.
Add water and stir again.

Frozen Egg Yolks

4 yolks
1/8 t salt
OR
1 1/2 t sugar or corn syrup

Beat together and freeze.
Even so, thawed yolks are not ideal for delicate bakes like custards.

Toasted Sugar

4 lbs sugar

Adjust oven rack to center.
Preheat to 275° fan.
Pour sugar into 9x13 Pyrex.
Toast 1 hour or until sugar turns ivory.
Stir and continue roasting.
Stir every 30 mins to mix sugar and release steam.
Roast 2-5 hours.
Let cool to room temp, stirring occasionally.
Transfer to an airtight container.
Use in any recipe as a substitute for white sugar.


Note:
If the temps are too high, your sugar may start to become caramel.
The recommendation is to pour the toasted sugar off the top.
I think not; I stir it all together and then sift out my toasted sugar.
Then I take my pieces of hardened caramel.
Separately, I food process those into caramel granules.
Two products for the price of one!
Use this instead of sugar on crème brûlée or for any instant caramel.
Caramel granules liquify with heat better than toasted sugar.
Toasted sugar dissolves in water better than caramel granules.

Cake Covering Fondant

113 g vegetable shortening
16 oz bag mini marshmallows
2 T water
    (If making very bold colors, use 1 T water and 1 T gel color)
1/2 t vanilla, rose, or almond extract, optional
907 g powdered sugar, sifted
20 oz or 567 g Wilton fondant
gel color, optional

Place vegetable shortening in stand mixer bowl.
Double boil or microwave marshmallows, stirring until smooth.
Pour water and extract along sides of marshmallows to release.
Pour marshmallows and water into stand mixer.
With the dough hook, knead on lowest setting.
Add half sugar and let mix 2 mins.
Once mixture is uniform, add another cup of sugar.
Coat hands in vegetable shortening and pull soft dough off hook.
Place in a large bowl with remaining powdered sugar.
Microwave Wilton fondant to soften, about 40 secs.
Knead powdered sugar, marshmallows, and Wilton fondant by hand.
Pull like taffy until stretchy and smooth.
If fondant tears, microwave 30 secs and knead again.
Add a small amount of gel color if desired and knead.
Can be used immediately.
Roll with cornstarch and powdered sugar to 1/8".
Work only with very clean surfaces.
Fondant will adhere to itself with water.
Cover chilled but not frozen cakes.
Always roll fondant much, much larger than cake.
Store very well wrapped at room temp.
Never refrigerate fondant or cake with fondant.
Use a fan or a hairdryer on cold to help dry.

Cake Release

1/4 C flour
1/4 C vegetable oil
1/4 C vegetable shortening

Measure out the flour and empty it into a small mixing bowl.
Pour oil into the same measurer and pour over oil.
Use a butter knife to press shortening into the same measurer.
It will come right out because of the oil!
Whisk everything together and strain through nutmilk bag.
Apply to cake pans with pastry brush.
Makes enough for two large cake projects.

6 T cinnamon
4 t ground ginger
1 T allspice
1 T cloves
1 T nutmeg

Slime

4 oz clear or glitter Elmer's glue, or any PVA/polyvinyl acetate glue
4 oz C water
1/4 to 1/2 t baking soda
1 T saline solution containing boric acid and sodium borate

Optional:
3 C foaming shaving cream
glitter
beads
water based color
essential oils, lotion, or hand sanitizer

Add glue, water, and baking soda into bowl and stir.
If making fluffy slime, add shaving cream.
Add glitter, beads, and/or color and stir.
Add essential oils, lotion, and/or hand sanitizer and stir.
Add saline solution and stir vigorously.
When slime starts to form, knead with hands.
Add more saline if necessary.
Notes 1:
I believe:
glue - elasticity
water - fluidity
baking soda - reduces stickiness, more form and firmness
borate ions -  thickness, rubberiness
shaving cream - fluffiness
glitter - sparkle
beads - texture
water based color - color
essential oils, lotion, or hand sanitizer - comfort & fragrance

Notes 2:
Slime must be well kneaded for saline to be at maximum effectiveness.
Adding too much saline can make slime too stiff.
Clear glue usually doesn't need as much baking soda as white glue.
Add extra glitter, beads, and shaving cream before saline.
Dissolve extra baking soda in water or glue before saline.

16 C water
1 C ammonia
4 C rubbing alcohol
2 t Dawn dish soap

In a large bowl, combine ingredients in order.
Don't smell the ammonia.

Bath Bombs

4 cm Radius Bath Bomb

120 g baking soda
60 g citric acid
60 g epsom salts
60 g cornstarch
1 t essential oils
20 g castor oil or less
liquid soap color
91% isopropyl alcohol

3.5 cm Radius Bath Bomb (67% volume of 4 cm)

80 g baking soda
40 g citric acid
40 g Epsom salts
40 g cornstarch
1/2 - 1 t essential oils
14 g castor oil or less
liquid soap color
91% isopropyl alcohol


3 cm Radius Bath Bomb (42% volume of 4 cm)

50 g baking soda
25 g citric acid
25 g epsom salts
25 g cornstarch
1/2 t essential oils
8 g castor oil or less
liquid soap color
91% isopropyl alcohol

Whisk dry ingredients together in stand mixer.
Choose how much castor oil you would like; it is very hydrating.
Combine oils and color.
Drizzle wet ingredients into dry ingredients, whisking vigorously.
If using max oils, mixture should be just wet enough to stick together.
If mixture requires additional moisture, spray with alcohol.
Press into molds.
Tap on mold and carefully remove.
Allow to dry overnight.
