Snickerdoodles

70 g sugar
1 t cinnamon
375 g flour
2 t cream of tartar
1 t baking soda
1 1/2 t cinnamon
1/2 t salt
1 C butter, room temp
267 g  sugar
1 egg
1 yolk
2 t vanilla

Preheat oven to 375 and line two baking sheets.
Whisk together 70 g sugar with 1 t cinnamon and set aside.
Separately, whisk together flour, tartar, soda, cinnamon, and salt.
Cream sugar and butter 2 mins or until fluffy.
Add egg, yolk, and vanilla.
Add dry ingredients just until combined; dough will be thick.
Roll into 1 1/2 T balls.
Roll balls into cinnamon sugar.
Arrange 3" apart on baking sheets.
Top with extra cinnamon sugar.
With no resting, bake 10 mins.
Lightly press down on them with the back of a spoon to flatten & crack.
Let cool on baking sheet.
Store in an airtight container.
