Cookie Cake

1 1/2 C butter, room temp
440 g brown sugar
2 eggs, room temp
2 yolks, room temp
4 t vanilla
500 g flour
4 t cornstarch
2 t baking soda
1 t salt
283 g bag mini chocolate chips
170 g or 1 C chocolate chips

Preheat oven to 350.
Line 15 inch round with parchment and set aside.
In a stand mixer bowl, beat butter on medium 1 min or until creamy.
Add brown sugar and continue beating another min.
Add eggs, yolks, and vanilla and blend until combine.
Separately, whisk together flour, cornstarch, baking soda, and salt.
Add dry ingredients to stand mixer and mix on low speed until combined.
Add chocolate chips.
Press into pan 14" in diameter and bake 20-25 mins or until golden brown.
Trim to 14".
Let cool and decorate with your favorite buttercream.
